I am very thankful I could buy tinned coconut milk in most supermarkets around and in online stores. The availability of this product is a very big help especially for Asians like me who uses a lot of coconut milk in our food. I bought this brand of coconut milk in one of the big supermarkets in my neighbourhood. It is quite good but not as good as the freshly squeezed coconut milk. I can't really complain because it is a lot handier to use since I don't have the right facilities for extraction and of course the scarcity of fresh coconut. It is very seldom I can see fresh coconut in the supermarkets and if there are I am not if there were fresh or not.
I use this tinned coconut milk in cooking many Asian meat and vegetable recipes such as curries. I also use this in desserts. Generally tinned products do not give the same results as fresh products but my long experience of using this tinned coconut is giving me ideas to do better. When I open the can, I don't normally mix the contents so that I would be able to scoop the creamier top layer and use it in my recipes. The thicker layer gives more flavour to my food.
