I bake a lot and I have used several different types of vanilla extracts in my life. The one that I can find most readily and has a great vanilla flavor is the one made by McCormick's. Willoughby M. McCormick began his business in 1889 making products in his basement and selling them door to door. Extracts were one of those products.
The only thing you will find in the ingredients of McCormick's Pure Vanilla Extract is vanilla beans, alcohol and water. Extract is much more flavorful than any of the flavorings and you only need a little bit to enhance the flavor of many different recipes. Vanilla is a must in cakes, cookies, pies, frostings and other baked goods, but it can be as good in meat marinades, coffee, and in other main dish recipes. I find that McCormick's brand has a nice, full-bodies flavor. My cookies always come out really good when I make them with this vanilla.
I usually get the 1 ounce bottle of vanilla, but it goes pretty fast. There is a 16 ounce bottle that is huge and I'd be good for vanilla for quite some time. The four ounze is just right for a home kitchen. Always keep vanilla extract out of direct sunlight. Put it in a cupboard so it stays fresh.
