Mexican night is a favorite in our household, but sometimes we get tired of the same old taco flavors. When I saw Taco Bell's chipotle flavored seasoning mix, I grabbed a packet to give it a try. Quite a refreshing change from the usual mix that I use! The chipotle seasoning adds a delicious smokiness that you don't get with regular taco seasoning. The fact that it is easy to make is a plus in my book as well. Simply brown and drain a pound of ground beef, add the seasoning and a little water, and let simmer for a few minutes. Before you know it, the beef is all ready to use in tacos or any other recipes you would like. One of the favorites in my family is to enclose the beef mixture in canned biscuits. Simply smoosh out the biscuits on a baking sheet, spoon a bit of the meat mixture in the middle, add some cheese on top, then close the biscuit up. Be sure to seal the edges well. Bake as directed on the biscuit package. When they are done, you have delicious Mexican beef biscuit pockets. Top with sour cream and a bit of salsa or fresh guacamole and it's something the whole family will enjoy.
